Winter Pancakes

Winter came late this year in Toronto. You can still see people wearing Fall coats & jackets these days. But gradually you can feel it’s sneaking in. There’s gonna be a bit of snowing during the next few days. Coldness is one of Toronto’s characters. You gotta be tough in the winter coz shoveling the driveway is gonna be a lot of workout.

Open the fridge and found that there’s still half a bottle of maple syrup, which is a really good moisturizer for your body-system. Add some warm water, then you’ll get a nice drink. Yes, what about some pancakes + maple syrup. That’s a good idea. ^^ There’s really no need to buy the pancake mix. Just DIY again. Here’s the recipe:

1-1/4 cups flour
2 tbsp sugar
2 tbsp baking powder
3/4 tsp salt

1 egg
1-1/3 cups milk (for thicker panckes use 1 cup)
3 tbsp oil (butter/margarine)

– In a large bowl, mix the first 4 ingredients.
– In a small bowl, beat egg slightly, stir in milk and 3 tbsp oil.
– Add to the flour mixture and stir just until flour is moistened.

This is good for 3 persons. It was kinda “膩” (too fat) when following the original recipe. So, I used 2 tbsp olive oil and 1-1/2 tbsp sugar instead. UMMM Smells good…
